RESTAURANT CONCEPTS

& OPERATIONS

Creativity! It's what gets most of us chefs up each morning and it still drives me today.  But my life has become a complex layering of disciplines that go way beyond the line.

 

Add in operational assessments, developing re-imagining or repositioning menus and concepts; designing kitchens, bars, concession stands or full blown restaurants; creating wine, cocktail and beer strategies and then the operational procedures and manuals to launch and manage everything, and on occasion even taking them through start up. That is what my life is like today.

 

The irony is that almost all of this work is done for others, entities like fast food, restaurant and hotel chains and more recently equity groups. Projects can come in segments, collaborations or as an entirety. It really doesn't matter in the long term. It's the satisfaction that comes with completion that keeps me going.  That and the added plus of knowing that my team and I are influencing the future in a positive and dynamic way.
